This is one of my favorite one-pot skillet meals to make on a busy week-day night. “Study after study confirms that a diet richly enhanced with an array of colorful vegetables (more than corn and potatoes, please), provides nutrients and other powerful substances that protect the body from cancer, heart disease and type 2 diabetes. Think about it; if we take the time to buy, prepare and eat more vegetables and fewer salty French fries, we may not need to spend valuable time trying to recover from a stroke, heart attack or other serious condition.” - Barbara Quinn RD. [PREACH IT] • • • @sprouts spicy chicken burgers for the win for my protein for my delish plate of veggies. [roasted squash and zucchini, cucumbers, red pepper hummus, romaine, and watermelon]
Charcuterie boards are my new favorite go-to appetizers to bring to events 👌🏻 they are an easy filling addition to all the yummy sweets. Balancing out the carbs with some protein! Plus they are so fun to put together (so many different combos!) This one was a hit at @jamieleegordon baby shower today!
I love my little fam 💕 also, does anyone see any resemblance between Sullivan and I? Wondering how I produced an exact Chris replica 🤣
Plant Based (aka anti-inflammatory meal). 👐🏻 • • Soba noodles. Edamame. Butternut squash noodles. Broccoli. Bell Peppers. Carrots. Onions. Garlic. + Asian sauce.
Made extra portions for dinner tonight so that Chris and I could have tasty and balanced meals for lunch tomorrow (I do this every night) 🌟If I am going to be in the kitchen then I’m going to make sure that I have extra for lunches the next day so I have no excuse for choosing less healthy options from the fridge in a rush or having to run to a fast food joint for emergency food on my lunch break. Plus, prepping ahead helps us save money by avoiding having to make those fast food runs. It’s a win win win if you ask me 🤷♀️ At this point, this is so routine for us that I couldn’t tell you the last time I didn’t bring a lunch with me to work! That’s what happens when you make good habits 👌🏻 • • • Meal: simple turkey meatballs, sliced watermelon, roasted carrots and zucchini [seasoned with onion powder, garlic powder, pepper, and chili powder + tossed in some olive oil]. • • I’m looking for inspiration, what’s your favorite go-to easy meal to prep?
