New favorite vegetable substitute for pizza is eggplant! I find this way more delicious than the cauliflower options [plus the cauliflower pizza in store contains a lot of sodium 😳]. • • This took about 15 minutes to put together and you can top with any of your favorite pizza toppings! We used sautéed baby kale and baby spinach, garlic, onion, no added salt tomato sauce, salt, pepper, and mozzarella cheese. Just another quick and easy way to get more veggies in! It’s a good option for those adhering to a “low carb” diet or who have diabetes as well ⭐️ • • Another awesome plant based meal option is in my list of favorites now!
I did it. Made my own jelly and it took <10 minutes. Golly that was easy and it’s way tastier than store bought plus it’s A-okay for Sullivan too. No added sugar jelly dance over here 💃🏼 I used a strawberry chia seed jam recipe off the google. Was one of the first recipes when I searched for no added sugar homemade jam! We are never going back now, will be making this regularly!
Favorite plant based meal?? PEANUT BUTTER AND JELLY. Hands down. Currently taking recommendations for brands that have no added sugar jelly? Can’t seem to find a plain fruit spread without added sugar. Just noticed that the apple butter we had been gifted that we have in the fridge has 9grams of added sugar in 2tbsp! 😳😳😳 help. When I find a good alternative I will let you guys know, I am going to make my own (tons of recipes online for this) I’m the meantime because I’m feeling like having more PB&J’s in the future. Jams and jellies are condiments that you should definitely look at the nutrition label for ⭐️ be an educated consumer ⭐️ Hummus on the side for dipping the cucumbers.

Made the BEST almond flour marble cake ever for husbands birthday. He didn’t even realize that it was made with what he likes to call “healthy” flour 🤣 I like to bake with almond flour because it has a higher protein and fat content and lower glycemic index (aka doesn’t affect blood sugars as much). It helps me make desserts that satisfy me 🙌🏻⭐️
Sullivan and I just want to wish our favorite man Happy Birthday! We are beyond blessed to call you ours. I knew you would be an amazing dad but you have blown me out of the water with how easy you have made this parent thing. You still change more diapers than I do and spend so much quality time with him, you are by far the most fun parent out of the two of us and I’m okay with that. You still get up with him at insane hours everyday and you absolutely never complain. Thanks for helping him learn and grow so much while I’m at work. I am blessed to have met you and I can’t believe God thought it fit to give me such an awesome husband. Thanks for being patient, kind, self-less, and always being up for an adventure with me.
