This is one of my favorite one-pot skillet meals to make on a busy week-day night. Chris and I both work full time so sometimes its a struggle to keep enough healthy food in the fridge for us to bring meals to work + have hot meals on the table every night. This meal is quick and easy to make plus you can make it in a large portion so that you have plenty to pack for lunches for the next day.
Healthy Turkey and Veggies, One-Pot Skillet Meal

Ingredients:
- 16 ounce bag Cauliflower Pearls (found in the produce section)
- 1 lb lean Ground Turkey
- 4 cups Stir-Fry Veggies (fresh or frozen, whatever you have available! If you choose frozen thaw for a few minutes prior to adding)
- 1 cup Edamame
- 1/2-3/4 cup Reduced Sodium Soy Sauce
- Olive Oil
- Salt
- Pepper
- 2 tsp. Ginger
- 3 cloves Garlic (minced)
- 1/2 medium sized onion (cut into small pieces)
Directions:
- Heat olive oil in large skillet over medium high heat
- Add onion and garlic to skillet (saute until fragrant)
- Cook ground turkey, make sure to stir frequently so turkey crumbles
- Add broccoli pearls, stir fry veggies, edamame, soy sauce, salt, pepper, and ginger to skillet, mix all ingredients, cover and cook until veggies are cooked to desired consistency (8-12 minutes)
- Serve hot and pack leftovers for lunch the next day!
