Healthy Turkey and Veggies, One-Pot Skillet Meal

This is one of my favorite one-pot skillet meals to make on a busy week-day night. Chris and I both work full time so sometimes its a struggle to keep enough healthy food in the fridge for us to bring meals to work + have hot meals on the table every night. This meal is quick and easy to make plus you can make it in a large portion so that you have plenty to pack for lunches for the next day.

  • 16 ounce bag Cauliflower Pearls  (found in the produce section)
  • 1 lb lean Ground Turkey
  • 4 cups Stir-Fry Veggies (fresh or frozen, whatever you have available! If you choose frozen thaw for a few minutes prior to adding)
  • 1 cup Edamame
  • 1/2-3/4 cup Reduced Sodium Soy Sauce
  • Olive Oil
  • Salt
  • Pepper
  • 2 tsp. Ginger
  • 3 cloves Garlic (minced)
  • 1/2 medium sized onion  (cut into small pieces)


  1. Heat olive oil in large skillet over medium high heat
  2. Add onion and garlic to skillet (saute until fragrant)
  3. Cook ground turkey, make sure to stir frequently so turkey crumbles
  4. Add broccoli pearls, stir fry veggies, edamame, soy sauce, salt, pepper, and ginger to skillet, mix all ingredients, cover and cook until veggies are cooked to desired consistency (8-12 minutes)
  5. Serve hot and pack leftovers for lunch the next day!
