Seriously guys, this is the easiest and most simple bread recipe ever. It takes me about ten minutes of prep and an hour in the oven to bake. The combination of peanut butter and banana is delicious, as we all know, and its even better in bread! I will normally eat a slice for breakfast in the mornings. The addition of flax-seed adds omega-3’s, fiber, and antioxidants into the mix. The bread is dense and filling and tastes good with pretty much any type of topping (jelly, butter, almond butter, peanut butter, etc.). Hope you guys enjoy!
Peanut Butter Banana Bread Recipe

- 1 and 1/2 cup whole wheat pastry flour
- 3/4 cup oats
- 1/2 cup brown sugar
- 1/4 cup finely ground flaxseed
- 1 Tbsp. baking powder
- 1 tsp. cinnamon
- 1 and 1/4 cup milk
- 1/3 cup creamy peanut butter
- 1 egg
- 2 large, very ripe bananas, mashed
- 1 tsp. vanilla extract
Preheat oven to 350.
In two separate bowls, mix dry, then wet, and then combine, adding wet to dry and stirring gently until all ingredients are mixed well.
Pour mixture into a non-stick or cooking sprayed bread/loaf pan.
Bake 1 hour — do a fork check near the end to test done-ness. Enjoy!
