Super-food of the Month: Sweet Potatoes

Sweet-Potato-940x626I present monthly super-food education talks with the assisted-living community I work with and it is one of my favorite things to do. The ladies love learning unique nutrition facts about foods and they especially  love  sweet potatoes since they are associated with anti-aging benefits – good thing we have sweet potatoes on the menu every day!.

Nutrition Facts:

Sweet potatoes are nutrient powerhouses with vitamin C, fiber, potassium, Vitamin E, iron, magnesium and phytochemicals like beta carotene and lutein. One medium sweet potato can give you your entire days supply of Vitamin A.

  • To maximize nutrients, pick sweet potatoes that are dark orange
  • Vitamin A is an antioxidant linked to anti-aging benefits, cancer prevention, and contributes to good eyesight.
  • Sweet potatoes are fat and cholesterol free and low in sodium.
  • When selecting sweet potatoes, look for those that are firm with smooth skin and small to medium in size.
